Brown Butter Gnocchi With Zucchini Ribbons

According to Wikipedia, “Gnocchi are various thick, soft dough dumplings that may be made from semolina, ordinary wheat flour, egg, cheese, potato, breadcrumbs, or similar ingredients.” Premade gnocchi are pretty easy to find these days and are even available at Trader Joe’s. What really makes a gnocchi dish special are the ingredients you mix into it.

Seared Ahi Tuna Salad

In our ongoing effort to be healthy, we are attempting to eat more salad. Unfortunately, salad can get boring if you stick to the basic ingredients: lettuce, tomato, carrot, broccoli etc… It’s time to mix things up.

There is a restaurant in Palo Alto called Sprout that has a fancy seared tuna salad. Their salad contains pepper crusted ahi tuna, mixed greens, wakame seaweed, somen noodles, firm tofu, nori, edamame, kaiware sprouts, carrots, sesame seeds, and a miso sesame dressing.  It has a lot of ingredients that I love, but quite a few I could do without. Plus, Palo Alto is a little out of my way, and I wanted to create a salad I could easily make for myself at home.

This simple recipe uses just a few key ingredients to add exotic flavor to a healthy salad.
